In this special ‘Italian Food Traditions’ episode, I’m at my family ‘agriturismo’ (Agriturismo L’assiolo), just outside of Matera, to bring you a video in which my Dad makes a traditional recipe that we call ‘La Pignata’.
It’s a very old recipe from this part of Italy that is made with mutton, vegetables and many other delicious ingredients. The most interesting part of it though is the way we slow cook it in a beautiful terracotta pot, which is similar to an amphora, for many hours in a wood fire oven.
This is such a special part of our culinary culture and tradition here in Basilicata and I wanted to share it with you here on my channel. Who knows, maybe one day you might make the trip to Matera and try it for yourself!
