***TIPS***

1. This recipe uses homemade sourdough and that’s why it needs a good 5-6 hours to rise. If you like though, you can swap the sourdough for a simple brewer’s yeast and then the dough only needs 2 hours to rise.
2. When working the dough, make sure you do it gently and for a good amount of time (at least 15-20 minutes). You’ll be so thankful for the results!
3. After the focaccia dough has risen, try to spread it to the edges of the tin from the middle. Like this you’ll create an even layer of focaccia.
4. Don’t forget to give those olives a little push into the focaccia dough – this will help to prevent them from getting burnt!

250g PLAIN FLOUR
250g DURUM WHEAT SEMOLINA FLOUR
350ml WATER
100g SOURDOUGH or 10g BREWER’S YEAST
150g BOILED POTATOES
1 TEASPOON OF HONEY
10g SALT
CHERRY TOMATOES
BLACK OLIVES
OREGANO
OLIVE OIL
SALT
